For Chicago’s Joshua Millman, starting a business was a lot like starting a family. In fact, Joshua received his first coffee order on the same day in 2011 that his daughter was born. It is fitting then that these beans were farmed by the mother-son duo at Finca La Bolsa, a three-generation family coffee business in Huehuetenago, Guatemala. Passion House Coffee Roasters transforms this bourbon varietal into a well-rounded and sweet coffee. As it cools, the candied-orange acidity opens up, popping out of a surprisingly herbaceous background of parsley and pu-erh tea, with deep fruity cacao notes anchoring the base.
